The discipline
Charcuterie is controlled transformation.
Good charcuterie isn't made by putting meat in a cabinet and waiting. It begins long before the chamber. You choose the right raw material. You calculate and apply the cure correctly. You work cleanly. For fermented products, you manage the culture and fermentation correctly. Then you create the conditions in which that product can mature slowly and evenly.
That's where Steak Locker comes in. What I want from the chamber is almost boring: consistency. No chasing room temperature. No guessing what the humidity did overnight. No uncontrolled swings in airflow.

The method
The Four C's.
Cure, culture, cleanliness, climate. The first three are mine as the maker. The last one is the part I ask Steak Locker to own.
Cure
Salt and curing agents are functional ingredients, not seasoning you measure by eye. Where nitrite or nitrate is required for the process, I use a proven formulation and weigh it accurately. Nitrite performs an important food-safety role in cured meats, including helping inhibit Clostridium botulinum. Nitrate is used in certain longer-duration traditional processes and can act as a source of nitrite as the product matures.
The rule: I do not improvise the cure.
Culture
Fermented sausage is a fermentation before it is a drying project. The starter culture, temperature, time and resulting acidity all matter. Drying cannot repair a fermentation that was never properly established.
The rule: Fermentation and drying are two different jobs.
Cleanliness
Charcuterie starts with disciplined hygiene. Clean hands. Clean knives. Clean grinders and stuffers. Clean hooks, trays and work surfaces. Good raw material. Proper handling temperatures. Control of cross-contamination. The cabinet cannot undo careless handling before the product reaches it.
The rule: Technique is part of food safety.
Climate — STEAK LOCKER'S JOB
Stable temperature. Controlled relative humidity. Managed airflow. A repeatable environment from one batch to the next. Too aggressive a drying environment can dry the exterior faster than the interior. Too much moisture creates another set of problems. The objective isn't simply to make meat lose water — it is to let the product mature evenly and predictably.
The rule: This is the one variable I hand to the machine.
Why it isn't just flavour
Why botulism matters.
Clostridium botulinum deserves particular respect because under suitable conditions it can produce botulinum toxin. That is one reason traditional curing isn't just about flavour. Salt, correctly used curing agents, acidity where applicable, temperature control and moisture reduction can each form a different part of the safety system depending on the product. No single one of those controls should be treated as magic. And neither should the chamber.
The cabinet is a control — not the whole safety system.
How I finish
I don't finish by the calendar.
Someone will always ask: “How many days?” That is not the question I use to decide when charcuterie is finished. A 2 lb muscle and an 8 lb muscle do not behave the same way. Neither do a lean bresaola, a fatty coppa and a salami.
I record the starting weight and track percentage weight loss as the product matures. Then I read the whole product — not a number on a calendar.
The calendar tells me how long it has been hanging. The product tells me when it is ready.

Start small. Prove the process.
As with any craft, I test the recipe before committing 30 lbs of meat to it. A 2 lb test batch is cheap tuition. It is far better to learn from a small run and crystallise the recipe than to discover later that an untested assumption has ruined an entire production batch.
The purpose of the test batch is simple: remove uncertainty. Confirm the cure. Confirm the seasoning. Confirm the fermentation. Confirm the chamber settings. Confirm the drying behaviour. Then scale.
Once the process is working, I don't casually change the variables. A material change in temperature, humidity, ingredient ratios, meat size, casing, fermentation conditions, airflow or technique means the process has changed. “Seat-of-the-pants” curing has no place here. If something unusual happens — a temperature excursion, a humidity problem, an equipment issue, an interrupted fermentation, a sanitation failure — I stop and assess it rather than assume the product will correct itself.
A 2 lb trial gives me information. A 30 lb mistake gives me waste, uncertainty and potentially a food-safety problem. Perfect the process small. Document it. Repeat it. Then scale it.

Whole muscle, fermented sausage and fat-rich cures each behave differently. The finish is never one universal number applied to everything — it's the endpoint appropriate to that product.
Whole Muscle
Coppa · Lonzino · Bresaola
Cure → Equalise → Dry → Assess → Cut
The objective is controlled, even moisture loss with the texture appropriate to the particular muscle — not simply reaching an arbitrary number of days.
Finish: the validated process and a product-specific weight-loss target, then confirmed by texture and cut face.
Fermented Sausage
Salami · Saucisson
Cure + Culture → Ferment → Dry → Verify → Cut
Fermentation is a separate controlled stage. Only after the fermentation target has been achieved does the drying phase take over.
Finish: validated fermentation plus the appropriate drying endpoint and product-specific weight-loss target.
Fat-Rich Cures
Pancetta & related
Cure → Equalise → Dry → Assess → Cut
Fat changes the way a product loses weight and how we perceive its final texture. I don't expect pancetta to behave like a lean bresaola.
Finish: the appropriate product-specific endpoint rather than one universal percentage.
The result
The cut face tells the story.
This is the moment I care about. Cut through a finished coppa, bresaola or salami and you can see much of what happened during the process: the colour, the distribution of fat, the transition from surface to centre, the texture, whether the drying feels balanced rather than simply dry.
It's the charcuterie equivalent of cutting into a beautifully aged ribeye. The outside shows the process. The cut face shows the result.

Answered directly.
What temperature and humidity for dry curing?
The drying phase runs 53 to 60°F at 70 to 80% RH, held steady for weeks to months. The cure and any fermentation come first — that's the maker's craft. The chamber's job is to hold the drying environment dead steady.
How do you know when it's finished?
Not by days. I track percentage weight loss from a recorded start weight, then read the whole product — feel, aroma, surface, internal texture, and validated pH and water activity where the process requires it.
Why is UV off?
Traditional styles carry a protective white mould bloom, the same family that ripens a bloomy cheese. UV would kill it, so it comes off for mould-ripened charcuterie — the same inversion as affinage. The toggle lets one cabinet run both mould-ripened and protein programs.
Does the cabinet make it safe on its own?
No. The cabinet is a control, not the whole safety system. Safe curing depends on the cure formulation, correctly used curing agents, fermentation where applicable, hygiene, and validated endpoints. Temperature, humidity, time or weight loss alone are never proof of safety.
Should I start big?
No. Prove the recipe on a 2 lb batch first — cheap tuition. Confirm the cure, seasoning, fermentation, chamber settings and drying behaviour, document it, then scale. A small trial gives information; a large mistake gives waste.

Use appropriate curing ingredients and cultures according to validated formulations and applicable food-safety requirements, and verify critical endpoints appropriate to the product and process.
