Affinage is the other half of cheesemaking — the part that happens after the make, in the cave. It is where a fresh wheel develops its rind, its texture, and the depth that separates a serious cheese from a commodity one. Same discipline as meat aging, inverted: here the microbes are the point, not the enemy. This is where we document the conditions, the styles, and the failure modes.

The mechanism

What affinage actually does to a wheel.

Three processes run together in the cave, and unlike meat aging, you are cultivating life rather than suppressing it.

Moisture loss firms the paste and concentrates flavour. A young wheel is high in water; controlled, even drying over weeks or months turns a bland, rubbery curd into something dense and expressive. Too fast and the rind cracks and the paste dries to chalk; too slow and it slips or weeps.

Proteolysis and lipolysis are the enzymatic engine. Enzymes from the milk, the culture, and the rind break proteins and fats into smaller compounds — the source of the nutty, savoury, sometimes barnyard depth of an aged cheese. This is the direct parallel to what calpains do in beef, and it builds glutamate the same way. That is the umami.

The rind is a living surface. Bloomy moulds, washed-rind bacteria, natural-rind flora — these organisms ripen the cheese from the outside in and define the style. This is why UV comes off for affinage: the same light that protects a dry-aging ribeye would sterilise the exact cultures a cheese depends on.

3–5 Weeks

Bloomy rinds bloom and ripen. The paste softens toward the rind first. Delicate, fast-moving programs that need daily attention.

Semi-hard and washed-rind styles find their balance. Rinds are washed or brushed on a schedule; texture firms and aroma builds.

Hard and alpine styles develop depth and crystalline structure. Slow, forgiving, and stable — the programs that most reward a cabinet that holds steady.

The four variables. And what happens when you get them wrong.

Affinage fails in predictable ways, and every failure traces back to one of four variables drifting out of range. The variables are the same as meat aging — the targets, and the role of UV, are not.

Temperature — 50 to 55°F

Cave temperature, warmer than any meat program. Warm enough for the cultures and enzymes to work at a useful pace, cool enough to keep ripening controlled. Different styles sit at different points in the band, but stability is what matters.

Failure mode: Too warm and ripening runs away — the paste slips, ammonia builds, the rind overdevelops. Too cold and everything stalls; the wheel sits inert and never comes into its window.

Humidity — 80 to 95% RH

The variable most caves get wrong, and the one the Steak Locker closed-loop humidity system was built to hold. Affinage wants high, steady humidity — up to 95% for washed and bloomy rinds — so the wheel loses moisture slowly and the rind stays supple.

Failure mode: Too dry and the rind cracks and the paste dries to chalk before the cheese has ripened. Too wet with poor airflow and you get slip skin and unwanted surface growth. A domestic fridge holds 30 to 40% — nowhere close.

Airflow — gentle, even, constant

Airflow keeps humidity even across the cave and stops stagnant pockets where the wrong moulds take hold. For cheese it must be gentle — enough to circulate, never enough to dry the rind or push it toward case hardening.

Failure mode: Dead air breeds patchy, unwanted mould and uneven rinds — one wheel ripens, the one beside it slips. Too much airflow dries and cracks the rind.

UV — off for affinage

This is the one that inverts. On a meat program, UV suppresses surface microbes. On a cheese program it would kill the rind cultures that are the cheese. The Steak Locker UV is toggleable per program — off for affinage, on for protein — which is the whole argument that this is multi-program hardware.

Failure mode: Leave UV on out of habit and you stall or kill the bloom — the rind never establishes and the cheese ripens unevenly, if at all. The control matters as much as the light.

The programs

Style by style. What to run and what to expect.

Every family of cheese wants its own cave conditions and its own attention. These are the styles that reward a cabinet you can hold steady for the long programs.

Hard & Alpine

6–12+ Months · Long game

Cheddar, gruyère, alpine and parmesan styles. The most forgiving programs — slow, stable, and driven by depth rather than daily intervention. Lower humidity, longer time.

Expect: Firm crystalline paste, deep savoury notes, tyrosine crunch past a year.

Washed-Rind & Semi-Hard

2–4 Months · Hands-on

Tomme, raclette, taleggio and washed-rind styles. Higher humidity and a washing or brushing schedule build the aromatic rind. The most attention-hungry programs.

Expect: Supple paste, pungent aromatic rind, real range from mild to bold by month.

Bloomy & Blue

3–8 Weeks · Delicate

Brie and camembert styles, and blues. High humidity, gentle airflow, fast timelines. Blues need their own space — the spores travel and colonise everything nearby.

Expect: Bloomy rinds in weeks; blues ready fast but ravenous for a dedicated cave.

One cabinet, one job

Cheese and meat don't share a box. They want different temperatures, different humidity, and opposite UV settings, and the aromatics cross over. Run one program per cabinet at a time — serious affinage alongside a meat program is the honest case for a second dedicated unit.

Blues want isolation. Penicillium roqueforti spores travel. Age a blue in the same cave as a bloomy or a washed rind and you will find blue where you didn't put it. Give blues their own program.

Don't chase every style at once. Pick a family, hold its conditions, learn its window. Affinage rewards focus far more than variety.

What temperature and humidity do you age cheese at?

Warmer and far more humid than meat: roughly 50 to 55°F, with humidity from 80% for hard styles up to 90–95% for washed-rind, bloomy, and blue. The exact target is style-specific. Holding it steady for weeks to months is what matters — a drifting cave cracks rinds and stalls ripening.

How long does cheese need to age?

By style. Bloomy rinds in 3–5 weeks; semi-hard and washed-rind in 2–4 months; hard and alpine from 6 months past a year. Longer isn't automatically better — each style has a window where it peaks, and past it the paste dries and the flavour sharpens.

Why turn UV off for cheese?

Because the rind cultures and moulds are the point. Meat aging uses UV to suppress surface microbes; cheese depends on them. The Steak Locker UV toggles per program — on for protein, off for affinage — which is what makes it real multi-program hardware.

Can you age cheese and meat in the same cabinet?

Not at the same time. Different temperature, different humidity, opposite UV, and the aromatics cross over. Run one program per cabinet — which is the honest reason serious affinage alongside a meat program calls for a second unit.

Can you age cheese in a normal refrigerator?

No. A fridge holds 35–40°F and 30–40% humidity — too cold and far too dry. The rind dries and cracks, the paste never develops, the cultures stall. Caves exist because ripening needs warm, very humid, stable conditions a food fridge can't hold.
