Beef isn't the only animal that rewards time.
Pork, venison, and wild game respond to controlled aging the same way beef does — firmer texture, concentrated flavour, more character — on shorter, tighter programs. Less fat cover means less margin, so the environment has to hold. This is where we document what to run, how long, and where the limits are.

The mechanism
What aging does to pork and game.
The same two processes as beef — dehydration and enzymatic breakdown — with one difference that changes the whole program: these animals carry far less protective fat.
Dehydration concentrates flavour by removing water, exactly as in beef. On pork it firms the loin and deepens the nutty character; on lean game it intensifies an already direct, mineral flavour.
Enzymatic breakdown tenderises. Game especially — naturally lean and firm — benefits, the enzymes softening the muscle and rounding out the sharper edges of its character over one to three weeks.
Why the margin is tighter: pork fat oxidises faster than beef fat, and lean game has little fat cover at all. Both mean the surface is more exposed and the useful window shorter. Humidity and airflow control matter even more here than with a well-marbled beef subprimal.
The environment
The four variables. And what happens when you get them wrong.
The architecture is the same as beef. The difference is margin: with less fat cover, pork and game punish drift faster.
Temperature — 34 to 38°F
36°F is the working target, the same as beef. Cold enough to keep the meat safe, warm enough that enzymatic activity continues at a useful rate across a shorter program.
Failure mode: A fridge's temperature cycling causes condensation and wet spots. On leaner meat with less fat to buffer it, spoilage establishes faster than on a marbled beef cut.
Humidity — 75 to 85% RH
The variable that decides whether lean meat ages or just dries. Held steady, the surface pellicles correctly while the interior concentrates. This matters more on game than on any beef cut.
Failure mode: Too dry and lean game case-hardens fast, sealing a sour interior under a dry shell. Too wet and the exposed surface spoils. A home fridge at 30 to 40% simply desiccates lean meat.
Airflow — continuous, gentle, even
Airflow carries moisture off the surface and prevents stagnant pockets. On leaner cuts with more exposed muscle, even coverage is critical — every face needs the same gentle, constant movement.
Failure mode: Uneven airflow dries one face and leaves another tacky. Too aggressive and lean muscle case-hardens before it has aged.
UV sterilisation — on
On for pork and game, the same as beef. UV suppresses surface microbes over the program, part of the food-safety architecture rather than an optional extra. Toggleable per program — on for these, off only for affinage.
Failure mode: Without UV, surface growth over even a two-week program is likely, and on game the line between benign and unsafe is harder to read. UV, humidity, and airflow work as one system — what Intertek NSF Category 7 validates.
The programs
Cut by cut. What to run and what to expect.
Pork and game each behave differently, and differently again from beef. These are the cuts that reward controlled aging most reliably.
What not to age
Lean, trimmed cuts. Pork tenderloin or a trimmed venison loin has no protection and dries to jerky. Age larger, protected primals and portion after.
Fatty pork past its window. Pork fat turns before the muscle does. Push a pork program too long and the fat, not the meat, is what fails.
Poorly sourced game. Aging concentrates what's already there — including flaws. Wild game demands clean sourcing and handling before it ever reaches the cabinet.

Can you dry age pork?
Yes, on shorter programs than beef. Bone-in rack and loin age well over 14 to 21 days, developing firmer texture and a deeper, nuttier flavour. Pork fat oxidises faster than beef fat, so the window is tighter and sourcing matters more. Age bone-in with the fat cap on, trim after.
How long do you age venison?
Typically 7 to 21 days by animal and cut. Aging tenderises a naturally lean, firm meat and rounds out its character. With little fat cover, humidity and airflow control matter even more than with beef to avoid drying the exposed muscle too fast.
What temperature for pork and game?
34 to 38°F with steady humidity, gentle airflow, and UV on — the same architecture as beef. Less fat cover means less forgiveness, so a drifting cabinet dries or spoils these faster than a marbled beef cut.
Is aged game safe?
Controlled aging of well-sourced, properly handled game is long-standing practice, but sourcing and handling stay the operator's responsibility, and wild game carries its own considerations. The cabinet holds conditions steady; it doesn't substitute for good sourcing. When in doubt, cook it thoroughly.
Bone-in or trimmed?
Bone-in where you can. The bone and fat cap protect the muscle and slow moisture loss, as with beef. Age the largest primal you can, then trim and portion just before cooking. Lean trimmed cuts age fast and dry out.
